Bronco Bites: Roasting The Redskins On Orange Sunday

When the Denver Broncos meet the Washington Redskins tomorrow, you’ll want to be ready for Orange Sunday. I have a pair of recipes for your Game day Grubfest that fit the theme of the occasion. So let’s get to it.



Roasted Chicken with Smokin' Orange Sauce


This dish will take about 45 minutes to finish and will feed 8 skinny people.

Ingredients

  • Cooking spray

  • 8 (5-oz) skinless chicken breast halves (with bone)

  • Salt and ground black pepper

  • 1 cup orange marmalade

  • 1 Tablespoon soy sauce

  • 1 teaspoon liquid smoke


Directions


1.) Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.

2.) Season chicken all over with salt and black pepper. Arrange chicken in prepared pan and set aside.

3.) In a small bowl, combine orange marmalade, soy sauce and liquid smoke. Mix until blended. Pour mixture over chicken.

4.) Roast 35 minutes, until chicken is cooked through.

5.) Serve with Roasted Potatoes (recipe below).



To accompany the Smokin’ Orange Chicken, I have a special concoction for this week.



Roasted Redskin Potatoes


Ingredients

  • 3 pounds small red potatoes

  • 1/4 cup good olive oil

  • 1 1/2 teaspoons kosher salt

  • 1 teaspoon freshly ground black pepper

  • 2 Tablespoons minced garlic (6 cloves)

  • 4 Tablespoons minced fresh rosemary leaves

  • 2 Tablespoons minced fresh parsley


Directions


1.) Preheat the oven to 400 degrees F.

2.) Cut the potatoes in half or quarters and place in a gallon-size ziplock storage bag with the olive oil, salt, pepper, rosemary and garlic.

3.) Toss until the potatoes are well coated.

4.) Dump the potatoes onto a sheet pan and spread out into 1 layer.

5.) Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip the potatoes a few times during the cooking process with a spatula in order to ensure even browning.

6.) Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Makes: 8 servings
